4 cups black beans, soaked overnight
6 cups water
1-3 chipotle peppers, cut, seeds and all!
1 cup tomato sauce
2 Tbsps olive oil
3 cloves garlic, minced
1 Tbsp each: sea salt, cumin powder, fresh oregano
1 tsp coriander powder
1/8-1/4 tsp asafoetida powder
In a large pot cook beans or pressure cook beans, water and chipotle peppers for about 30 minutes. When beans are soft, add in the rest of the ingredients and simmer until seasoning unite. Salt to taste.
